Fish Friday!

I'm on time! Can you believe it? 

This week's recipe is a yummy lobster salad recipe that is so easy and so good it will blow your mind.  I made this recipe earlier in the week and then decided to use it in my cooking class last night.  My class was at Now You're Cooking in Bath and it was actually about pollock but there's nothing like bringing lobsters in to win over your students.

So, here's the recipe and a few shots from my class!

Lobster salad on cukes!
1/2 cup of mayo
1/4 cup of sweet red pepper, diced
some lobster (as much or as little as you'd like!)
cuke or two

Mix the mayo, lobster, and red pepper in small bowl.  Really you can use as little or as much of each ingredient as you'd like.  Slice the cuke and dollop the mixture onto each slice.  Ta da!  Or, as my nephew says, "Ta na!" 



We used our sweet pepper from our CSA share with some lobster that was just plucked from the water and it was amazing.  You might think that the pepper would be too strong with the lobster but then you would be wrong.  They enhanced  the flavors of each other.  The tender meat and crunch of the pepper- perfect.
